2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
¼ tsp salt
4 eggs
1 15oz can of pumpkin
1 2/3 cups sugar
1 cup oil
1 recipe cream cheese frosting
In a medium bowl stir together flour, baking powder, cinnamon, baking soda, and salt: set aside.
In a large mixing bowl beat together eggs, pumpkin, sugar and oil. Add the flour mixture; beat until well combined.
Spread batter in an ungreased 15x10x1 inch baking pan. Bake at 350 for 25 to 30 minutes or until toothpick comes out clean. Cool completely and frost with cream cheese frosting. (recipe below) Store in refrigerator. Serves 20
Cream Cheese Frosting
1 pkg cream cheese, softened
1/4 cup butter or margarine, softened
1 tsp vanilla
2 cups powdered sugar
In a medium bowl beat together cream cheese, butter and vanilla till fluffy. Gradually add powdered sugar, beat until smooth.
