HOLLANDAISE SAUCE

3 egg yolks
1 T. lemon juice
1/2 tsp. salt
1/2 c. butter, melted

In blender, mix all ingredients except butter. Slowly pour in HOT butter while mixing on low speed. The hot butter actaully cooks the egg a little so make sure it's HOT. Refrigerate if not using immediately.

We love artichokes, but even more we love this sauce to dip them in! I usually double this recipe!

MANGO SALSA

envelope Italian Dressing Mix
1 can (16 oz.) black beans, drained, rinsed
1 can Hominy drained (you can use white or yellow doesn't matter)
1 cup chopped ripe mango ( you can buy this in the produce section in a jar if you can't find a mango right now.)
1/2-3/4 cup chopped tomato ( you can do more, I am not a fan of tomato)
1/3 cup chopped red onion (or less if you are worried about your breath)
1/4 cup chopped cilantro (I used parsley last time for you cilantro allergic folk, you just need the green to make it look pretty)
1/4 cup lime juice

Mix it all together, let it sit for an hour in the fridge, then eat it with tortilla chips.

Thanks for the recipe JACQUE!!
