MAKE-AHEAD MEATBALLS

4 Eggs
2 C dry bread crumbs
1/2 C finely chopped onion
1 T salt
2 tsp Worcestershire sauce
1/2 tsp pepper
1 clove garlic minced
5 lbs lean ground beef
In a large bowl, beat eggs. Mix in next 6 ingredients. Add beef, mix well. Shape into 1" balls, about 12 dozen. Place in single layers in ungreased 15x10 inch pans. Bake at 400 for 10-15 minutes until no longer pink, turning often; drain and cool. Place about 30 meatballs each into freezer containers may be frozen for up to 3 months. Yield: 5 batches.

I made these tonight substituting stuffing mix (Mrs. Cubbisons) for the breadcrumbs. Then I just left out the salt and garlic. Very yummy. Thanks.
